INSTRUCTIONS
Heat oven to 200.
Pour vegetable oil 1/4 deep in skillet. Heat to medium-high heat.
Meanwhile, mix together cottage cheese, flour, cinnamon, yolks &
apple. In another bowl, beat egg white until stiff, shiny peaks form.
Gently fold egg white into cheese mixture. Drop rounded
tablespoonsful of cheese mixture into hot oil. Cook 1 minute on each
side until golden. Drain fritters on paper towels. Keep warm in oven
while you cook the rest. Serve with applesauce & sour cream.
