Apple Harvest Cake

INGREDIENTS

1 1/4 c Flour
1 c Whole wheat flour
1 c Sugar
3/4 c Brown sugar; packed
1 tb Cinnamon
2 ts Baking powder
1 ts Salt
1/2 ts Baking soda
3/4 c Cooking oil
1 ts Vanilla
3 Eggs
2 c Apples; finely chopped
1 c Chopped walnuts –glaze—–
1/2 c Confectioner's sugar; sifted
1/4 ts Vanilla
2 ts Milk

INSTRUCTIONS

Generously grease and flour a 10-inch fluted tube pan;set aside. In a large
mixing bowl combine the flours, sugars, cinnamon, baking powder, salt and
baking soda. Add oil, vanilla and the eggs, beat until well mixed. Stir in
the chopped apples and walnuts. Spoon batter evenly into prepared pan. Bake
in a 350 F oven for 45-50 minutes, or until cake tests done. Cool in pan 12
minutes; invert cake onto a wire rack. Cool thoroughly. Drizzle top with
powdered sugar glaze, or dollops servings with sweetened whipped cream
Powdered Sugar Glaze: In a small mixing bowl, stir together powdered sugar,
vanilla and enough milk to make of drizzling consistency. Drizzle over
cooled cake.
