INGREDIENTS

5 Eggs seperated
5 Yellow apples, peeled up
to 6
1/2 c Sugar
1 Lemon, 3 tablespoons
juice of
4 T Potato starch
1/2 c Chopped nuts, optional

INSTRUCTIONS

(from Spice and Spirit- kosher Passover Cooking)  Beat egg whites until
stiff. Grate apples on large holes of  grater.Beat egg yolks with
remaining ingredients. Mix in apples. Fold  in egg whites. Bake in
greased 8"x8" pan at 350* for 1 hour.  variation: you can put a layer
