INGREDIENTS
| 1 1/2 | c | All purpose flour |
| 1 | c | Whole wheat flour |
| 1/2 | c | Brown sugar, packed |
| 4 | ts | Baking powder |
| 1 | ts | Salt |
| 1 1/2 | ts | Ground cinnamon (I like cinnamon so I used 2 teaspoons) (up to 2) |
| 1 | tb | Poppy seeds |
| 2 | Eggs (or egg substitute equivilant) | |
| 1 1/2 | c | Applesauce |
| 1 | ts | Vanilla extract |
| 1/4 | c | Oil |
INSTRUCTIONS
Combine applesauce, eggs, oil, and vanilla in small bowl; mix well. In a seperate bowl mix flours, brown sugar, baking powder, salt, cinnamon and poppy seeds. Add wet ingredients to dry ones; stirring until just moistened. Spoon batter into greased muffin tins, filling 2/3 full. Bake at 400 F for 12-15 minutes.
