Apple-Stuffed Guinea Fowl

INGREDIENTS

1/2 sm Onion
1 Dessert apple
1 tb Shelled pistachio nuts
1 tb Chopped parsley
Salt and freshly ground pepper
A 2 lb guinea fowl
1 1/2 oz Butter

INSTRUCTIONS

Preheat oven to Gas Mark 4/350F/180C. Chop pistachio nuts.
Peel and finely chop onion. Quarter, core and finely chop apple.
Mix together chopped onion, apple, pistachios, parsley, salt and
pepper.
Season guinea fowl with salt and pepper.
Fill guinea fowl cavity with apple mixture. Place on roasting tray.
Dot guinea fowl with butter. Roast for 1 1/4-1 1/2 hours until cooked
through, basting often. Serve.
