INGREDIENTS

75 g Fresh wholemeal breadcrumbs; (3oz)
75 g Ready-to-eat dried apricots; chopped (3oz)
50 g Walnuts; finely chopped
; (2oz)
Zest and juice of 1/2 lemon
1 tb Freshly chopped parsley
1 Egg; beaten
Salt and freshly ground black pepper

INSTRUCTIONS

Place the breadcrumbs, apricots, walnuts, lemon zest and juice,
parsley, egg and seasoning in a bowl, and mix well.
Use as required to stuff a bird or cook separately in a preheated
oven 200 °C/400 °F or Gas Mark 6 for 20 minutes.
