1/2 c Cooked black-eyed peas, well
drained
optional up to 1
Fresh corn kernels sliced
from 1 cob corn optional
Leaves from 1 bunch
cilantro diced medium
fine
1/2 t Salt, up to 1
1 Lemons, Juice of up to 11/2

INSTRUCTIONS

Toss all ingredients together, starting with lesser amounts of hot
pepper, salt, and lemon. Taste. Add additional heat, salt, or lemon,
to taste. Serve, raw, as accompaniment.  Yield: 1 3/4 to 2 1/2 cups
