Artichokes With Mustard Sauce

INGREDIENTS

4 Large Artichokes
1 Clove Garlic
1/2 c Vinegar
1/4 c Oil
1/3 Butter
1/3 Mayonnaise
1/3 Mustard
1/2 t Salt
1/4 t Pepper

INSTRUCTIONS

Cut off top 1/4 of the artichokes.  Fill a large pot 3/4 full with
warm water.  Add garlic, vinegar,oil and artichokes.  Cook over
medium-high heat for 45 minutes.  Turn artichokes upside down on  paper
towels until drained and cold.  When cold, pull out center  leaves,
spoon out core. Cut lemon in half, taking out lemon pulp.  Mix together
sauce ingredients and spoon into hollowed out lemon  halves.  Push
lemon halves into the top of hollowed out artichokes.  Tear off
artichoke leaves, dip in sauce and enjoy. From: Syd's  Cookbook.  File
