1/4 | c | Pine nuts or walnuts, toasted |
1/3 | c | Chopped red onion |
INSTRUCTIONS
Break arugula into pieces and place in a salad bowl. Peel oranges and cut into sections, reserving juices. In a small bowl, whisk together oil, vinegar, reserved juices, salt and pepper. Toss serve, add oranges, nuts, red onion and dressing to arugula. Toss lightly before serving. Yield: 6 servings Prep Time: 10 minutes.
