Arugula Salad With Oranges

INGREDIENTS

2 Bunches arugula
5 Oranges
2 T Olive oil
2 T Red wine vinegar
1/4 t Salt
1/4 t Pepper
1/4 c Pine nuts or walnuts, toasted
1/3 c Chopped red onion

INSTRUCTIONS

Break arugula into pieces and place in a salad bowl. Peel oranges and
cut into sections, reserving juices. In a small bowl, whisk together
oil, vinegar, reserved juices, salt and pepper. Toss serve, add
oranges, nuts, red onion and dressing to arugula. Toss lightly before
serving. Yield: 6 servings Prep Time: 10 minutes. Typed in MMFormat by
