INGREDIENTS

1/2 lb Fresh arugula leaves; washed and dried
4 Roma tomatoes; sliced
1/2 c Red onion; sliced
1/4 c Fresh chopped parsley
2 ts Red wine vinegar
1/4 c Red onion
Salt & pepper

INSTRUCTIONS

Remove the stems from the arugula and place the leaves in a salad
bowl. Mix in the tomatoes, onion and parsley. Place the vinegar in a
separate bowl and slowly whisk in the oil. Season with salt and
pepper. Pour the dressing over the salad and toss to blend well.
Serves 4.
