Asiago Cheese Sticks

INGREDIENTS

2 c Cake flour
1 1/3 c Semolina flour
2 tb Baking powder
1/2 c Plus 2 Tbs. unsalted butter; softened
1/4 c Plus 1 Tbs. sugar
4 lg Eggs
1 lg Egg yolk
3/4 c Milk
1/2 c Buttermilk
3/4 c Asiago cheese; grated

INSTRUCTIONS

Prep: 15 min, Cook: 15 min.
Preheat oven to 350°F. Combine first 3 ingredients in a bowl. Stir to mix
well and set aside. Cream butter and sugar in a mixing bowl, until smooth
and light. Add eggs and egg yolk, one at a time, beating and scraping the
bowl constantly until smooth. Stir in reserved dry ingredients until
incorporated. Add milk and buttermilk and mix to form a smooth batter. Fold
in Asiago. Pour batter into greased cornstick molds (or prepared cake pan)
and bake 15-20 minutes or until golden brown and cooked through. Remove
from heat and let cool briefly before turning out of pans and serving.
