INSTRUCTIONS
Put the sliced cucumbers into a bowl with the shallots and sprinkle
over the vinegar.
Add the sweet chilli sauce and fish sauce and toss the salad.
Just before serving add the coriander leaves and peanuts and toss
again. Serve at once.
