INSTRUCTIONS
Reduce the vinegar and sugar until caramelised, add ginger, garlc, chilli and spices. Cook for 2 minutes, add chopped tomatoes and continue to cook. Blend, return to heat and finish with fish sauce and seasoning. Split lobster, brush with oil then mark on a hot grill. Spread herb butter onto the lobster and roast in hot oven.
