Avocado-stuffed Rainbow Trout

INGREDIENTS

4 Rainbow trout cleaned and
gutted
Olive oil
1 Ripe avocado pear, peeled
and chopped
1/2 Lime, juice of
2 oz Chopped pistachio nuts
1 T Clear honey
1 T Light soy sauce
2 oz Cooked white rice
1 T Chopped fresh coriander
Salt and black pepper
Lime slices
Coriander leaves

INSTRUCTIONS

Wash and prepare the trout. Mix all the ingredients together to form a
moist stuffing. Fill the inside of the trout with the stuffing, make
sure all gaps are well packed. Brush olive oil over the fish and bake
