Plain yogurt

Unsalted butter; melted

Mild cheddar cheese; grated

Cooked bacon; crumbled
INSTRUCTIONS
1. In large bowl, whisk together flour, cornmeal, sugar, salt and baking
soda.
2. In another bowl, whisk together eggs, milk, yogurt and butter. Whisk
into flour mixture just until combined.
3. Heat griddle over med heat (350F). Preheat oven to 200F if you want to
hold pancakes.
4. Pour 1/4 cup of batter, forming 4" rounds and sprinkle 1 tbsp of cheese
and bacon onto each pancake. Cook until golden, 1-2 mins on each side.
Serve with cheese and syrup.
