Baked Catfish Dijon

INGREDIENTS

2 lb Catfish fillets
Salt and pepper to taste
3/4 c Thin sliced onion
2 tb Butter
1 c Mayonnaise
1/4 c Dijon mustard
2 tb Lemon juice
1/2 ts Tabasco
1/4 c Chopped parsley

INSTRUCTIONS

Preheat oven to 350. Arrange fish in shallow baking dish. Salt and pepper
liberally; cover with sliced onions and dot with butter. Bake 20 minutes or
until fish flakes easily. Mix mayonnaise, mustard, lemon juice, and
tobasco. Pour over fish and broil 2 to 3 minutes until brown and bubbly.
Sprinkle with parsley and serve hot with lemon wedges.
