INGREDIENTS

1 Head cauliflower; broken into flowerets
1 1/2 c Drained; canned tomatoes
1/2 c Chopped onion
1/2 ts Dried oregano
1/2 ts Salt
1/8 ts Pepper
3/4 c Grated or shredded cheese
3/4 c Coarse cracker crumbs

INSTRUCTIONS

Cook cauliflower 20 minutes, until just tender. In greased 2-quart
casserole combine tomatoes, onion, oregano, salt and pepper. Cover with
cauliflower. Mix cheese and crumbs; sprinkle over cauliflower. Bake in 400
degree oven for 20 minutes. Makes 6 to 7 servings.
I've been making this recipe since 1960. The oregano steps up the bland
taste of the cauliflower.
