All is shadow here below! The world is a shadow; and it passes away! The creature is a shadow; and the loveliest and the fondest may be the first to die! Health is a shadow; fading, and in a moment gone! Wealth is a shadow; today upon the summit of affluence, tomorrow at its base, plunged into poverty and dependence! Baked Cheese Omelette

Small curd cottage cheese

Grated Monterey Jack cheese
INSTRUCTIONS
Coat 4 (1-cup) bakers with butter, using 1 teaspoon per dish. Saute ham in
remaining butter about 5 minutes. Place in baking dishes. Beat eggs with
salt, pepper seasoning, sage, thyme, tarragon, flour and baking powder.
Stir in cheeses. Spoon into baking dishes. Bake in 400 degree oven 15
minutes. Reduce heat to 325 degrees and bake 15 minutes longer or until
puffed and golden.
Makes 4 servings.
