INGREDIENTS

25 g Butter; softened
4 sl Good ham; shredded
4 Free-range eggs
4 Dsp dry Fino sherry
125 ml Double cream
2 tb Chopped fresh chives
Salt and freshly ground black pepper

INSTRUCTIONS

Preheat the oven to Gas 5/375degF/190degC.
Grease 4 medium ramekins with the butter. Then place strips of ham in
each ramekin. Then break 1 egg on top of each piece of ham.
Add a tablespoon of sherry to each ramekin followed by 1 fluid ounce
of the cream.
Finally sprinkle the chives equally over each ramekin, season
generously with salt and freshly ground black pepper.
Place in a moderate oven for 6-8 minutes until the eggs are just set.
