INSTRUCTIONS
Heat the oil in a saut pan. Add the onion, cook until it softens. Add the spinach leaves and ham, cook for 1-2 minutes. Divide into 4 ovenproof dishes, arrange the chopped tomato around the edge, crack an egg into each dish, season with salt, pepper and thyme.
