Baked Potato Boats

INGREDIENTS

4 md Potatoes for baking
8 Rashers streaky bacon
125 g Grated Cheddar cheese; (4oz)
1 128 gram can chicken and mushroom toast topper
1 400 gram can baked beans
8 Lettuce leaves; washed
Diced red pepper to garnish; (optional)

INSTRUCTIONS

*Preheat the oven to 200 C, 400 F, Gas Mark 6.
*Wash and prick the potatoes with a fork. Place on a baking tray on
the centre oven shelf for approximately 1 hour, until cooked.
*Place the bacon on a baking tray and bake in the oven below the
potatoes for 8-10 minutes until golden. Cut into small pieces. Place
in a bowl with the cheese.
*When the potatoes are cooked, cut them in half lengthways. Scoop out
the potato flesh from 2 potatoes into the bowl with the bacon and
cheese. Take care as the steam from the potatoes is hot. Spoon the
filling back into the potato skins.
*Place on a baking tray and return to the oven for a further 15
minutes until golden.
Heat the beans and spoon onto the serving plate.
Place the potato halves on top and make sails by fixing a leaf on top
of each potato with a cocktail stick.
