INSTRUCTIONS
1. Combine the balm, oranges and red pepper and mix well.
2. Mix the oil into the vinegar, stirring thoroughly so as to thicken
the mixture, and season with salt and pepper.
3. Stir the orange juice in and add the dressing to the balm mixture.
4. Allow it to stand for a few hours before serving.

NOTES : This dressing is delicious with a chicory salad and also
makes a very unusual potato salad. Try it on mixed salads of all
kinds, or as a dressing for French beans. This recipe makes 150ml
(1/4 pint).
