INGREDIENTS

2 tb Balsamic vinegar
2 tb White-wine vinegar
2 ts Dijon mustard
1 Shallot; minced
2/3 c Olive oil

INSTRUCTIONS

In a bowl whisk together vinegars, mustard, shallot, and salt and
pepper to taste. Add oil in a stream, whisking, and whisk vinaigrette
until emulsified.
Makes about 1 cup.
