INSTRUCTIONS
Pre heat the oven to 180 C, 350 F, Gas Mark 4.
Grease and line a 1kg (2lb) loaf tin.
Cream the butter and sugar until light and fluffy. Gradually beat in
the eggs, one at a time.
Stir in the mashed banana lightly. Sieve the flours, spice, baking
powder and salt into the mixture and fold until incorporated.
Pour into the loaf tin and bake for 1-1 1/2 hours. Cool on a wire
rack.
Notes The loaf is delicious topped with honey whilst it is cooling.
