Mashed very ripe bananas (2 to 4 bananas, depending on size)
1/3
c
Shortening

tb
Milk
2
Eggs
1/4
c
Chopped nuts (I like walnuts best with this)
INSTRUCTIONS
In large mixer bowl, combine 1 cup of the flour, sugar, baking powder,
soda, and salt. Add mashed bananas, shortening, and milk. Beat on low til
blended and then on high for 2 minutes. Add eggs and remaining flour and
beat just til blended. Stir in nuts.
Pour batter into a greased 8x4x2-inch loaf pan. Bake at 350F for 55 to 60
minutes. (Done when tester comes out clean when inserted near center.)
Cool in pan on rack for 10 minutes. Turn out of pan and cool completely on
rack. The recipe says it's best when wrapped and stored overnight, but
These usually either get stored in the freezer til gift time, or they get
cut into as soon as they are cool enough to hold onto and cut.
