INSTRUCTIONS
1. Bring water to a boil in a saucepan. Add sugar and agar-agar and cook,
stirring, until the mixture begins to thicken.
2. Stir in evaporated milk, banana extract and food coloring. Remove pan
from heat.
3. Pour mixture into a shallow rectangular pan. Let cool; then refrigerate
until set. Cut in 1-inch squares.
4. Serve in individual dessert dishes, either plain or with Chinese
preserved fruits in syrup.
