INSTRUCTIONS
If you have the ingredients on hand, this is a 5 min dessert - perfect for the unexpected guest. Blueberries on top provide color and a flavor contrast that complements the apricot sauce. Puree the apricots with their juice in a food processor. Add the rum, if desired, and process briefly. Pour the lemon juice onto a serving platter. Peel the bananas and quarter them lengthwise. Arrange the bananas on the platter and roll them in the lemon juice to slow discoloration. Pour the apricot sauce over the bananas and sprinkle with the blueberries. Servings: 6 Really good and extremely quick.
