INGREDIENTS

11 oz Mixed fruit
3 oz Brown sugar
Grated zest of 1 lemon
13 Floz hot tea
13 oz Wholemeal plain flour
2 ts Mixed spice
2 ts Baking powder
1 Egg

INSTRUCTIONS

Place the fruit, sugar, lemon zest and tea in a bowl and soak
overnight.
Pre heat the oven to 190C. Grease and line a 1kg loaf tin.
Strain the fruit and reserve the liquid. Put the remaining
ingredients in a bowl and add the fruit and enough of the liquid to
make a soft consistency. Pour into the prepared tin. Bake for 45
minutes or until well risen and firm. Cool and serve with butter, if
desired.
