Barley Water (18th Century Recipe)

INGREDIENTS

3 oz Pearl Barley
2 pt Boiling Water
Grated rind and juice of 1 lemon
6 tb Caster Sugar

INSTRUCTIONS

Rinse the pearl barley, put into a jug and pour in the boiling water. Add
the lemon rind and lemon juice and sugar and stir thoroughly. Leave to cool
then strain into a clean jug or bottle before serving. This drink will keep
for up to 5 days in the fridge, but do cover it as barley water easily
picks up other flavours.
