Basic French Dressing (vinaigrette)

INGREDIENTS

3 T Olive oil, extra virgin or
mixture of virgin
and light olive oil
or a light seed oil
if you prefer a
milder flavour
1 T White vinegar
1 Clove garlic, smashed

INSTRUCTIONS

Combine all the ingredients in a screw-top jar or dressing bottle and
shake well together to mix thoroughly. Leave to stand for a few hours
or overnight for the garlic flavour to develop. The oil will separate
and float to the top after standing, so shake to combine before  using.
Top with more oil and vinegar as necessary, but always make  sure that
there is sufficient vinegar to cover the garlic in the  bottom of the
