INGREDIENTS
| 2 1/2 | lb | Baking potatoes,; peeled and cubed |
| 3/4 | c | Heavy cream |
| 1/2 | Stick unsalted butter | |
| 2 | tb | Lemon juice |
| 1/2 | c | Chopped basil leaves |
| 1 | tb | Grated ginger |
| 1 | tb | Minced garlic |

INSTRUCTIONS
In a large saucepan of salted water bring potatoes to a boil. Simmer about 20 minutes or until tender. Drain. Pass potatoes through a ricer into a mixing bowl. Meanwhile, in a small saucepan combine cream and butter. Bring to a boil and keep hot until potatoes are cooked. With a mixer or electric beater whip potatoes on slow speed, slowly drizzling in cream mixture. Do not overmix. Fold in lemon juice, basil, ginger and garlic.
