Ingredients: 2 tb Olive oil; 2 tb Cider vinegar; 2 ts Basil, chopped -=OR=-; 1 ts Dried basil; 1/2 ts Salt; 1/4 ts Pepper; 3 c Cooked rice, cooled; 2 md Tomatoes, chopped; 1 md Cucumber, seeded & chopped; 1 sm Red onion, chopped

INSTRUCTIONS

In a small bowl, whisk together oil, vinegar, basil, salt and pepper.
Add rice, tomatoes, cucumber and onion; toss.  Serve chilled.
