Basmati Pullao (Cashew and Raisin Pilaf)

INGREDIENTS

1 Onion; chopped
2 tb Vegetable oil
1 c Basmati rice
2 Cinnamon stick
2 Cloves
1 Bay leaf; crumbled
2/3 c Raw cashews; toasted
1/3 c Raisins

INSTRUCTIONS

Cook onion over low heat until tender.  Add rice, cinnamon, cloves, bay
leaf, cashews, raisins. Cook for 2 minutes. Add 2 cups of water; cover.
Bring to a boil; reduce heat to low. Cook for 15 to 20 minutes.
