INGREDIENTS

1 | c | Finely chopped red onion |
1 | t | Curry powder |
Salt and pepper to taste | ||
2 | c | Basmati rice |
1/4 | c | Apple juice |
2 | c | Water |
1 | c | Fresh or frozen green peas |
2 | T | Toasted pine nuts |
INSTRUCTIONS
Heat oil in a large skillet over medium-high heat. Add onion, and sprinkle with curry powder, salt, and pepper. Cook 3 minutes, stirring occasionally. 2. Add rice, stirring to coat. Cook for 1 minute, stirring occasionally. Stir in apple juice, mixing well to combine. Stir in water. Cover and lower heat to medium-low. Simmer, tightly covered, for about 40 minutes, until rice is tender and water is absorbed. 3. If using fresh peas, stir them into the rice halfway through the final cooking time.
