To 6 Perdue Individually Frozen boneless, skinless chicken breasts

To 2 tsp. Cajun or Creole seasoning

Chopped onion

Uncooked regular long-grain rice

(16 oz.) frozen black-eyed peas

(14 1/2 oz. each)Cajun-style stewed tomatoes

Chopped fresh parsley
INSTRUCTIONS
Preheat oven to 350°F. Lightly grease 13x9 inch baking dish. Sprinkle
chicken with Cajun seasoning; place in baking dish. In large bowl, combine
onion, rice, black-eyed peas and tomatoes. Pour over chicken. Cover and
bake 45 minutes. Uncover and bake 15 minutes longer, or until chicken is
cooked through. Sprinkle with parsley before serving. Makes 4 to 6
