Bbq Pork Shoulder Roast

INGREDIENTS

2 cn Coca Cola; left open overnight
; to become flat
1 3/4 lb. Pork shoulder roast
2 tb McCormick home style seasoned salt
1 md Onion; finely chopped
Sweet bay BBQ sauce to taste

INSTRUCTIONS

In a deep dish, season both sides of the roast with seasoned salt and
rub the onions on the roastbsp. Pour the coca cola in the dish. Cover
and let marinate in the refrigerator overnight, turning roast over at
least once during marinating time.
Preheat oven to 325 degrees. Place the roast fat side up in a
roasting pan on a rack. Cover and cook at 325 degrees for
approximately 3 - 4 hours or until internal temperature reaches 180
degrees. Remove lid and brush with BBQ sauce. Increase oven
temperature to 350 degrees and return roast, uncovered, to the oven
for 10 - 15 minutes. Be careful not to burn BBQ sauce.
Variation: Instead of returning to the oven with BBQ sauce, cook over
indirect heat in an outside grill with wood chips according to grill
manufacturer's instructions for 30 - 45 minutes. Remove and then
brush with BBQ sauce and serve immediately with bowls of BBQ sauce on
the side.
