Bean And Apple Casserole

INGREDIENTS

1 c 250ml Great Northern or
butter beans soaked
2 Firm eating apples, peeled
cored and quartered
1/2 T Brown sugar
1/2 t Cinnamon
1 T Red wine vinegar
Salt

INSTRUCTIONS

From: Margaret Baechler, a/k/a mbaechle@lehman.com  Cook the beans in
unsalted water until tender, about 1 to 1 1/2 hours.  Drain, reserving
the liquid. Preheat the oven to 350F (180C). Stir the  apples, sugar,
cinnamon, vinegar, and salt into the beans. Transfer  to an ovenproof
dish and just cover with some of the reserved liquid.  Cover with a lid
