Beef And Bean Minestrone

INGREDIENTS

125 g Haricot beans; soaked overnight
; (4oz)
1 tb Sunflower oil
250 g Lean minced beef; (8oz)
1 Red pepper; deseeded and finely
; chopped
1 Green pepper; deseeded and finely
; chopped
350 g Courgettes; thinly sliced
; (12oz)
2 Medium-sized onions; chopped finely
1 Clove garlic; finely chopped
1 1/4 l Chicken stock; (2 pints)
2 tb Tomato pur.e
75 g Wholewheat spaghetti; broken into small
; pieces (3oz)
4 tb Chopped fresh parsley
1 tb Chopped fresh thyme or 1 teaspoon dried
; thyme
1 tb Chopped fresh marjoram or 1 teaspoon
; dried marjoram

INSTRUCTIONS

Drain and rinse the soaked beans, and bring them to the boil in fresh
water. Boil for 10 minutes and then simmer them for 50 minutes. Drain
again. Heat the oil in a large, heavy saucepan on a high heat. Put in
the beef and stir until it browns. Put in the peppers, courgettes,
onions and garlic. Lower the heat and cook, stirring frequently, for
5 minutes.
Pour in the stock and bring it to the boil. Add the tomato pur.e,
beans, spaghetti and herbs. Cover, and simmer for 30 minutes.
Serve in big, deep bowls and accompany it with wholemeal bread.

enables a little beef to go a long way.
