INGREDIENTS

2 ts Vegetable oil
4 ts Curry powder
4 ts Minced fresh ginger
1 tb Minced garlic
1 lb Lean ground beef
1 1/2 ts Salt
4 c Cauliflower florets
3 c Finely chopped zucchini
1 pk Frozen peas; 10 oz
1 c Chicken broth
1 lb Gnocchi; cooked according to
; package directions
1/2 c Chopped fresh mint

INSTRUCTIONS

Heat oil in large skillet over medium-high heat. Stir in curry powder,
ginger and garlic; cook 30 seconds. Stir in ground beef and salt; cook,
stirring, until browned. Add cauliflower, zucchini, peas and chicken broth.
Cover and cook until vegetables are tender, 10 minutes. Toss with hot
gnocchi and mint in serving bowl. Makes 6 servings.
