Beef And Vegetable Curry From Lhj

INGREDIENTS

2 t Vegetable oil
4 t Curry powder
4 t Minced fresh ginger
1 T Minced garlic
1 lb Lean ground beef
1 1/2 t Salt
4 c Cauliflower florets
3 c Finely chopped zucchini
1 Frozen peas, 10 oz
1 c Chicken broth
1 lb Gnocchi, cooked according to
package directions
1/2 c Chopped fresh mint

INSTRUCTIONS

Heat oil in large skillet over medium-high heat. Stir in curry powder,
ginger and garlic; cook 30 seconds. Stir in ground beef and salt;
cook, stirring, until browned. Add cauliflower, zucchini, peas and
chicken broth. Cover and cook until vegetables are tender, 10  minutes.
Toss with hot gnocchi and mint in serving bowl. Makes 6  servings.
