INSTRUCTIONS
TO GARNISH
1. Heat the oil and fry the steak for 8-10 minutes, stirring
occasionally, until browned.
2. Add the garlic and flour, mix well and cook for 1 minute.
3. Stir in the wine, bring to the boil then cover and simmer for 1 1/2
hours.
4. Add the shallots or onions, bacon and thyme and cook for a further
1 hour.
5. Just before serving, sprinkle the bacon over the top and garnish
with sprigs of fresh thyme.
