Beef, Hominy And Bean Soup

INGREDIENTS

1/2 lb Ground round, crumbled
2 Cloves garlic
1 Onion, finely chopped
2 T Fresh parsley, finely
chopped
1 T Cilantro, finely chopped
1/2 t Dried whole thyme
4 c Beef broth
16 oz Canned pinto beans, rinsed
and drained
16 oz Canned hominy, rinsed and
drained
Salt and pepper, to taste
Onions, sliced thin
Jalapenos, sliced thin
Fresh cilantro, finely
chopped
minutes.

INSTRUCTIONS

Brown ground round in lightly greased skillet. Add garlic and onion
and cook until onion is lightly browned. Add parsley, cilantro, and
thyme and mix.  Transfer beef mixture to a soup pot. Add beef broth,
pinto beans,  hominy and salt and pepper. Bring mixture to a boil;
reduce heat and  simmer for  Serve with garnishes.  Per serving: 243
