INSTRUCTIONS
Beef juice may be prepared by pressing the juice from slightly warmed diced
beef. Finely chopped raw beef, in the proportion of 1/2 pound to 2
tablespoons of water, may be placed in the upper part of a double boiler
and kept over hot water for 2 hours. If a double boiler is not available
pack meat loosely in a glass jar and place on rack in pan of hot water.
Keep meat at a temperature of 150 F the entire 2 hours. Strain carefully.
