Beef Stew In Beer

Meats 4 Servings

INGREDIENTS

50 g Butter, unsalted
2 lb Diced topside of beef
1/4 t Ground coriander
4 Shallots, diced
2 Sprigs thyme
1 3/4 pt Newcastle brown ale
2 T Flour
2 T Dijon mustard

INSTRUCTIONS

Fry off the shallots in the butter. Add the beef and brown for 4-5
minutes. Add the flour and cook. Add the coriander and thyme and
mustard. Add the beer and cover the meat. Simmer gently for 11/2  hours
approximately. Remove the meat and keep warm.  Strain the sauce and
