Beef W/mushrooms,onion,ginger

INGREDIENTS

2 tb Oil
3 c Onions; cut lengthwise
2 tb Oil
1 lb Lean beef; ground or cut in fine strips
1 cn (3-oz) mushrooms; drained
2 tb Shredded fresh ginger
4 tb Soy sauce
2 tb Cornstarch
1 c Mushroom juice (juice from can plus water)
1 Beef boullion cube
Hot cooked rice or noodles

INSTRUCTIONS

Heat 2 Tbs oil & saute onions until slightly brown. Remove from pan. Reheat
pan, add 2 Tbs oil & beef, fry until browned. Return onions to pan; add
mushrooms, ginger & soy sauce. Heat thoroughly. Mix cornstarch & mushroom
juice; add to pan. Add boullion cube. Stir & continue to cook a few minutes
to thicken. Serve immediately with rice or noodles. 4 servings.
