Beef With Green Onion Over Rice

INGREDIENTS

1/2 lb 225g beef sliced
Mixture 1:
2 c Green onion, cut in 2" 5cm
sections
1 c Fresh mushrooms
1/2 c Bamboo shoots, thinly sliced
Mixture 2:
3 T Soy sauce
2 t Sugar
1 T Cooking wine or sherry
2 c Cooked rice

INSTRUCTIONS

Heat 2 Tablespoons oil in a preheated wok. Add the white part of the
green onion, fry until fragrant, then add the other ingredients in
mixture 1. Stir-fry briefly, then remove from wok. Heat another 3
Tablespoons of oil in the wok, add the beef, and stir-fry until it
changes colour. Add mixture 2, stir-fry briefly, then add mixture 1,
and stir-fry briefly again. Remove from wok. Put half of rice onto
each of two serving plates, and top with the beef with green onion.
Other vegetables may be served as an accompaniment to this dish.
