(20 oz.) crushed pineapple (but I've used mandarin oranges instead) |

Whipping cream; whipped and slightly sweetened |

Flaked coconut; slightly toasted |
INSTRUCTIONS
Prepare cake according to pkg. directions and bake in a greased and floured
13-by-9-inch baking pan. Combine pineapple (or mand. oranges) and sugar in
saucepan and bring to boil. Cool slightly. When cake has cooled, poke holes
in it with fork. Pour pineapple (or orange) mixture over it.
Prepare pudding mix according to pkg. directions; cool. Spread pudding over
cake. Chill. Just before serving, cover cake with sweetened whipped cream
and sprinkle with coconut.
(When I've used the mandarin oranges, I've cut them up into small pieces.)
