INGREDIENTS

1 tb Oil
1 Clove of garlic
10 Bhindi (okra) (to 12) per serving
3 Bay leaves
1 Chopped onion
1/2 ts Turmeric
1/2 ts Curry powder
2 ts Fresh coriander

INSTRUCTIONS

Heat the oil in a pan and fry the garlic until golden brown. Add to
the onion and bay leaves and fry for 1 minute. Add the spices and
fry. Wash and trim the bhindi then chop into small pieces. Add to the
pan and cook for 4-5 minutes Add 2 tsp fresh chopped coriander. Heat
for another minute then serve.
