Bibb Salad with Orange Balsamic Dressing

INGREDIENTS

2 tb Orange juice concentrate
1/4 c Balsamic vinegar
1 ts Honey
2 Scallions; finely minced
3 c Bibb lettuce (if not available; use romaine)
3 Oranges; sectioned
5 Chestnuts*; roasted, chopped

INSTRUCTIONS

This delicious salad is topped with flavorful balsamic dressing and can be
assembled in advance: Make the dressing, wash the lettuce, and section the
orange the night before and store in separate containers in the
refrigerator. *Substitute 2 tablespoons sliced almonds for chestnuts for
quicker assembly.
Combine orange juice, vinegar, honey, and scallions in a small bowl. Set
aside. Line four salad places with lettuce. Arrange orange sections on top
of lettuce. Top with chestnuts or almonds. Drizzle with dressing.
Serves six.
Per serving: Calories: 65, Fat: 0.5 gram, Cholesterol: 0, Sodium: 4
milligrams, Calcium: 50 milligrams, Dietary fiber: 2.5 grams.
